The Recioto di Soave is made by pressing air dried Gargenega grapes which have be lying on straw mats for 5 months after harvest. This process intensifies the sugars and flavours in the grapes. A small amount of Botriytis affected grapes are also included in the blend. This is then aged for 2 years in large oak vats
